The microbial world on a piece of cheddar cheese

SCOTT CHIMILESKI

About the piece:

Cheese may appear to be just another delicious food to eat. However, the rind of all aged cheeses is actually a thriving ecosystem of microbes. There are bacteria, fungi, and largest of all within this hidden microbial world, cheese mites, which feed upon the fungi. All of these microbes are perfectly natural parts of the cheese, and even contribute to their unique flavors. Here, just beyond what the human eye can see, cheese mites bustle across the rind of a freshly purchased piece of clothbound cheddar.
